Bunias orientalis is a herbaceous perennial that can reach heights of up to 90 centimeters. It develops clumps of lobed, serrated leaves that have a mild flavor reminiscent of cabbage when young, intensifying in heat as the leaves mature. In summer, it produces clusters of small yellow flowers, which can be harvested as buds and prepared similarly to broccoli florets. As a member of the brassica family, it exhibits resistance to club root.
